Apple Flaxseed Muffins
These moist and delicious muffins are packed with the natural sweetness of applesauce and fresh apples. Flaxseeds are so good for you. They are an Omega 3 fat. Ingredients

1/3 cup whole wheat flour

4 tsp flax seed
- ground

2/3 tsp baking powder

1 tsp cinnamon

1/4 tsp nutmeg

4 tsp coconut sugar
- can substitute other healthy sweeteners

1 egg
- beaten
-
4 tsp coconut oil
- melted

1/4 cup applesauce
-
2 1/2 tbsp skim milk
- or dairy-free optional

1 tsp vanilla

2/3 apple
- chopped finely

1 1/2 tbsps walnuts (chopped (these are optional))
Instructions
- Mix together all ingredients.
- Pour batter into prepared muffin pan and bake for 15 - 18 minutes or until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.
