Asian Vegetable and Ground Beef Soup
This soup offers a variety of Asian inspired vegetables along with hearty ground beef to create a perfect one pot meal.
Ingredients

1 1/2 tsp sesame oil

1 1/2 tsp ginger
- minced

1/2 green onion
- sliced

1/3 cup bamboo shoots
- drained and sliced

1/2 tsp hot chili oil

2 cups vegetable broth
- can substitute chicken broth

1/2 bunch bok choy
-
2 1/2 oz Shiitake mushrooms
- fresh

1/6 lb ground beef

1 tbs soy sauce
Instructions
- Cook ground beef in a pot, breaking it up as it cooks. Place cooked meat in a bowl to add later.
- In the same pot you cooked the beef, add the sesame oil and ginger and cook over medium heat for 2 minutes.
- Wash bok choy and cut it into bite-size pieces. Add to the pot and cook for 3 additional minutes.
- Slice green onion and shitake mushrooms and add to pot along with the broth, bamboo shoots, hot chili oil, and soy sauce, and ground beef. Simmer for 7-9 minutes. Once heated through, it is ready to serve.
- You can add siracha or another hot sauce to spice it up a bit. Enjoy!
