Baked Berry Oatmeal
A wholesome, lightly sweet breakfast made with oats, berries, and maple syrup. Simple to prep, nourishing, and perfect for busy mornings.
Ingredients

1 cup milk
- dairy or nondairy

1 egg

1 tbsp pure maple syrup

1 cup blueberries

2 tbsp butter
- melted and slightly cooled

2 tbsp unsweetened applesauce
- or mashed banana

1 1/2 cups old-fashioned whole rolled oats

1/2 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp pure vanilla extract
- can use almond extract

1/8 tsp salt
- a small pinch
Instructions
- Preheat oven to 350°F. Grease a 1 1/2-quart baking dish.
- In a large bowl, whisk all ingredients together. Pour into the prepared pan and top with nuts, if using.
- Bake for 35 minutes, until the center is almost set.
- Cool 5 minutes before serving. Enjoy warm, with yogurt if desired.
