Baked Egg with Zucchini & Cheese
This is a delicious way to start your day or to serve as a side and add a touch of nutrition and flavor to any meal.
Ingredients

1 tbsp vegetable broth

1/3 cup zucchini
- thinly sliced

1/8 cup onions
- diced

1 dash dried basil

1 slice havarti cheese

1 egg
Instructions
- Preheat oven to 350°.
- Add broth to a small sauce pan and warm over med/high heat.
- Add onions, zucchini, and basil. Cook covered until vegetables are soft, about 4 minutes.
- Put vegetables and remaining liquid into a small oven-safe dish.
- Place the cheese on top of the vegetables.
- Crack the egg and pour gently over the cheese.
- Cover with foil and cook for approx. 10 minutes or until egg white is set.
