Baked Egg with Zucchini & Cheese

  1. Preheat oven to 350°.
  2. Add broth to a small sauce pan and warm over med/high heat.
  3. Add onions, zucchini, and basil. Cook covered until vegetables are soft, about 4 minutes.
  4. Put vegetables and remaining liquid into a small oven-safe dish.
  5. Place the cheese on top of the vegetables.
  6. Crack the egg and pour gently over the cheese.
  7. Cover with foil and cook for approx. 10 minutes or until egg white is set.
