  1. Place all ingredients in a blender or food processor and blend until smooth.
  2. Heat butter or coconut oil in a pan over medium heat.
  3. Pour batter into heated pan to create pancakes.
  4. Turn heat down to low and cover the pan.
  5. Cook 3-5. minutes.
  6. Turn the pancakes over and cook uncovered for another 3-5 minutes so both sides are golden brown.
  7. For the suace: heat the blueberries in the microwave until soft - about 15 seconds. Stir in cinnamon. Top with chopped nuts if desired.
