Breakfast Burritos

Ingredients

1 tsp butter

2 eggs
- beaten

1/4 cup low-fat cottage cheese

1/4 cup black beans

1/4 cup peppers
- diced

1 whole wheat tortilla

1 tbsp low-fat plain Greek yogurt

1 tbsp salsa
Instructions
- Put butter into pan and melt over med-high heat.
- Add eggs, cottage cheese, peppers, and beans.
- When eggs are almost set place tortilla over eggs to warm tortilla.
- Remove tortilla and place egg mixture in center.
- Add yogurt and salsa and roll tortilla. Enjoy or wrap in foil to take with you.
