Chicken Paprika w/ Veggies
Paprika spices up this meal with its burst of color and flavor.
Ingredients

1/4 cup chicken broth

1/4 cup tomatoes
- canned, drained

1/4 onion
- diced

1/2 red pepper
- diced

1/4 lb chicken
- boneless, skinless breast

1/2 tsp Hungarian paprika

3/4 tsp olive oil

1/8 tsp caraway seed
- optional
-
2 1/4 tsp sour cream
- more or less to taste

4 tsp plain yogurt

1 tbsp fresh parsley
- minced
Instructions
- Add olive oil to a large pan and heat over med/high heat. Add chicken, stir and cook for 7-10 min. Add paprika and stir well.
- Add onions, peppers, and broth, and cook uncovered for 10 minutes. Add tomatoes, sour cream, yogurt, and caraway seeds.
- Stir well and cook until heated. Add salt and pepper to taste.
- Place in bowls and sprinkle 1 tbsp fresh parsley over each serving.
