Chicken Tortilla Soup
This soup is easy to make and includes your favorite Mexican flavors!
Ingredients

1/2 cup chicken
- cooked and diced

1/4 cup onion
- diced; can use yellow, white or red

1/2 clove garlic
- minced

1/2 cup corn
- fresh, frozen, or from a can

1/2 cup black beans
- drained and rinsed

3/4 cup tomatoes
- crushed, canned

1 cup chicken stock
-
1/8 tsp cayenne powder
-
3/4 tsp dried oregano
-
1/2 tsp smoked paprika
-
1/16 cup cilantro
-
1/4 lime
- juiced
-
3/4 tsp olive oil
-
cilantro
-
avocado
-
salt and pepper
- to taste
Instructions
- Heat up a large pan on medium-high heat with your olive oil. Once the pan is hot and the oil is sizzling, then toss in your diced onions and garlic. Cook until onions are translucent.
- add cooked, diced chicken, black beans, corn, tomatoes, and chicken stock. Stir together and turn the heat down until simmering.
- Add in the spices—cayenne pepper, oregano, paprika, lime juice, and salt and pepper to taste.
- Simmer for an additional 10 minutes and then serve!
- Top with optional ingredients, if desired.
