  1. In a small pot, combine oats, milk, water, chia seeds, cinnamon, and salt. Stir well.
  2. Add in the diced apple and bring to a gentle boil over medium heat.
  3. Reduce heat to low and let simmer, stirring occasionally, for about 5–7 minutes until the oats are soft and the mixture thickens.
  4. Stir in the maple syrup and vanilla extract (if using).
  5. Pour into a bowl and top with more apples, nuts, and a dash of cinnamon.
  6. Serve warm and cozy!
