Corned Beef & Cabbage Soup
It's not just for St. Patty's Day!
Ingredients

1 cup raw cabbage
- chopped

2 tbsp green onions
- chopped

1 clove garlic
- minced

1/3 cup carrots
- sliced

1 cup vegetable broth
- can substitute chicken or bone broth

3 oz corned beef

1/3 tsp fennel seed

1 pinch cayenne pepper

salt and pepper
- to taste
Instructions
- Put broth into a pot.
- Add diced cabbage, minced garlic, and carrots. Cook until until vegetables are soft (cook on medium heat, approx. 10 minutes).
- Add green onions, corned beef (you can buy from the deli or cook a corned beef at home), fennel seed, and cayenne. Simmer for 5 additional minutes, then serve.
- Is great with some hot sauce on top :)
