Curry Chicken Salad
This Curry Chicken Salad made with Greek yogurt and currants is healthy, protein-packed, and versatile!
Ingredients

3/4 cup chicken
- cooked, cubed

1 tbsp currants

1/2 cup arugula
- packed, whole or chopped

1 stalk celery
- finely chopped

1/2 tsp lemon juice

1 1/2 tsp mayonnaise

1 tbsp plain Greek yogurt

1 tbsp tarragon
- fresh, minced

1/2 tsp curry powder

salt and pepper

Instructions
- Add all ingredients one at a time, into a bowl and mix. Serve on a bed of rice or your choice of greens.
