Eggplant Stacks

You don't need to go to a fancy restaurant to have this fancy dish!

Ingredients

Instructions

  1. Rub both sides of the eggplant slice with olive oil.
  2. Cook covered over medium heat until eggplant is soft and browned.
  3. Place eggplant on a cookie sheet and top the sliced eggplant with a tomato slice.
  4. Place under broiler until tomato is just softened.
  5. Place cheese on top of tomato and broil until melted.
  6. Drizzle balsamic glaze or balsamic vinegar over cheese and top with fresh basil.
