Flourless Dark Chocolate Cake With Fresh Fruit Topping
This is a decadent dessert that you can't resist!
Ingredients

1/4 cup prunes
- pitted; can substitute dates

3 tbsp boiling water

1/4 cup cacao powder
- Can sub cocoa powder but cacao has more nutrients

1 egg

1 3/4 tsp maple syrup
- can sub honey

1 3/4 tsp vanilla extract

1/4 cup dark chocolate chips

1/2 cups strawberries
- chopped

1/2 cups blueberries
Instructions
- Place dates or prunes in a glass dish and pour boiling water over them. Let sit and soften for 15 minutes.
- Preheat the oven to 350ºF.
- Grease a baking dish or line with parchment paper.
- Put dates/prunes and the liquid into a blender. Add eggs, maple syrup, and vanilla and blend until smooth. Add chips and blend until almost smooth. Pour the mixture into a bowl and stir in cacao powder.
- Pour the batter into a prepared baking dish. Put in oven and cook for about 35 minutes or until batter is set.
- Once it cools, top with berries and enjoy.
