Greek Chicken Cauliflower Bowl

  1. Cut the chicken into bite-size pieces.
  2. Put 1/3 of the olive oil in a pan. Place chicken, lemon juice, and the oregano in a pan and cook over medium heat for about 7 minutes.
  3. Place chopped cauliflower in a blender and blend until resembles rice grains.
  4. Put 1/3 of the olive oil in a separate pan and heat on medium heat. Add the cauliflower and salt. Cover and cook for about 5 min or until just soft.
  5. Divide the “rice” in bowls. Top with cooked chicken and then with artichoke, tomatoes, olives, and feta. M
  6. Blend the vinegar, remaining oil, and oregano. Pour the dressing equally onto each bowl.
