Greek Salad with Feta Vinaigrette
This salad hosts a variety of vegetables and can be a meal in itself!
Ingredients

1 cup romaine lettuce
- chopped

1/4 cucumber

1/4 red bell pepper
- thinly sliced

2 tbsp grape tomatoes

2 tbsp kalamata olives
- pitted

1 tbsp feta cheese
- crumbled

2 tbsp artichoke heart
- chopped

1 pepperoncini
- whole

1/4 tsp lemon juice
- freshly squeezed

1 tbsp balsamic vinegar

2/3 clove garlic
- peeled and minced

1 pinch dried oregano

1 1/2 tbsp olive oil

1 tbsp feta cheese
- crumbled

salt and pepper
- to taste
Instructions
- Blend lemon juice, vinegar, garlic, oregano, oil, feta, and pepper to make dressing.
- Place the remaining salad ingredients in a bowl and dress to taste.
