Grilled Chicken over White Bean, Garlic Mash

The beans in this dish are low in calories, high in fiber and protein, and add a delightful texture to the grilled chicken.

  1. Grill or cook chicken breasts.
  2. Roast garlic in the oven at 400º for about 30 minutes or until slightly brown.
  3. Once roasted, add garlic into a Ninja or a blender with the drained great white northern beans and blend until smooth. Add the lemon juice and blend until the ingredients are mixed well.
  4. Put white bean, and garlic mash onto a plate, and then put the cooked chicken on top of the mash.
  5. Sprinkle dried rosemary over the top of the chicken along with olive oil. Add some salt and pepper to taste, and you're ready to eat!
