  1. Simply mix the first seven ingredients together, and allow the mixture to sit at room temperature for 30 minutes to let the flavors combine.
  2. Meanwhile, preheat a grill to medium-high heat. Grill the chicken until it reaches an internal temperature of 165.
  3. Mix the lime juice and the olive oil together and brush onto the chicken breasts. Season each breast evenly with salt, pepper, and ancho chili powder.
  4. Top the chicken with the peach salsa to serve! Enjoy!
