Healthy and Light Cous Cous Salad
This makes for a great side. Add some protein and you can serve it as a meal.
Ingredients

3/4 cup couscous
- prepared according to package

1/2 cup spinach
- packed - can substitute arugula

1/4 cup tomatoes
- diced

2 tbsp feta cheese

1 tbsp onion
- diced

1/8 lemon
- juiced

4 tsp olive oil

salt and pepper
- to taste

balsamic
- optional to drizzle on top
Instructions
- Put cooked couscous into a larger bowl, and mix in the spinach, tomatoes, feta cheese, onion, lemon juice, olive oil, and salt and pepper. Mix well. Serve immediately or let chill for 1 hour before serving.
