Heavenly Dark Chocolate & Pumpkin Cookies (Gluten free and dairy free!)

  1. This recipe makes 12 cookies. The nutritional information is based on 2 cookies. You can freeze cookies!
  2. Preheat the oven to 350ºF.
  3. In a bowl, beat together the pumpkin, egg, and vanilla extract.
  4. Add in the cinnamon, nutmeg, and oat flour and stir the ingredients well.
  5. Stir in the chocolate chips and optional nuts or currants
  6. Scoop out the dough into small balls and place on a cookie sheet.
  7. Bake for about 15 minutes.
  8. Enjoy! They're good fresh out of the oven :)
