Huevos Rancheros
This is a hearty and satisfying breakfast that's sure to spice up your morning routine!
Ingredients

2 tbsp vegetable broth

1 potato
- small, diced into small cubes

1/2 cup black beans
- drained and mashed

2 eggs
-
2 tbsp salsa
-
1/4 cup cilantro
- chopped

5-6 tortilla chips
- choose a corn tortilla chip if gluten free

salt and pepper
- to taste
Instructions
- Put broth in a small pan and heat over medium/high heat.
- Add potatoes, cover and cook for 15 minutes.
- Stir in mashed beans and salsa.
- Crack egg and place on top of potato and beans.
- Turn heat to low and cover until eggs have set, approx. 7 min.
- Place on plate, add chopped cilantro and serve with tortilla chips.
