Instructions

  1. Put broth in a small pan and heat over medium/high heat.
  2. Add potatoes, cover and cook for 15 minutes.
  3. Stir in mashed beans and salsa.
  4. Crack egg and place on top of potato and beans.
  5. Turn heat to low and cover until eggs have set, approx. 7 min.
  6. Place on plate, add chopped cilantro and serve with tortilla chips.
