Lemon Garlic Shrimp, Asparagus, and Gnocchi
Gnocchi is a hearty addition to this is a wonderful combination.
Ingredients

2 1/2 tbsp olive oil

2/3 cup gnocchi

2 cloves garlic
- minced

3/4 cup asparagus

1/2 red pepper
- diced
-
2 1/2 tbsp chicken broth
- reduced sodium

1/4 pound shrimp
- chopped

1 tbsp lemon juice
-
1 tbsp parmesan cheese
- grated - vegan options available if dairy free

1 tbsp fresh parsley
- chopped, optional
Instructions
- Bring pot of water to a boil.
- Add asparagus and peppers and cook for 4 minutes. Add gnocchi and cook for an additional 2 minutes. Add shrimp and cook for an additional 2 minutes. Strain all ingredients and keep in the strainer.
- In the same pan add the olive oil and place over medium heat. To that pan add minced garlic and cook for 2 minutes.
- Turn off heat and stir in the broth, lemon juice, and the gnocchi, and vegetables from the strainer.
- Plate the ingredients. Top with cheese (optional) and parsley and serve.
