Lentil, Sweet Potato and Sausage Soup
This is a luscious combination of flavors that will warm you up on a chilly day!
Ingredients

1/6 yellow onion
- diced

1/4 cup red lentils
-
1 cup water
-
1/6 lb spicy Italian sausage
- ground or links with casings removed

1/6 sweet potato
- large
-
1/2 tsp curry powder
- more or less depending on your taste

2 tbsp fresh basil leaves
- Thai basil is best

2 tbsp vegetable broth
- can substitute chicken broth

4 tsp milk
- cashew, almond, coconut, or reg

salt and pepper
- to taste

1/2 slice bread
Instructions
- Put 6 cups water in large pot and bring to a low boil. Add lentils and stir.
- Add sweet potatoes, onion and garlic. Turn heat to low and cover.
- In a separate pan, cook Italian sausage and add cooked meat to pot.
- Cover and cook for 25 minutes or until lentils and potatoes are soft.
- Add broth, milk, curry powder, and basil, stir, and cook an additional 5 minutes.
- For croutons: dice bread, toss in olive oil, and cook in a pan over a medium-high stovetop until crisp.
