Make Ahead Muffins
These little nutrition packed gems are perfect for any meal and can easily be taken with for a snack wherever you go!
Ingredients

2 eggs

1 pinch garlic powder

1/4 cup bell pepper
- chopped

salt and pepper
- to taste

1 tbsp yellow onion
- chopped

1/6 cup cheese (shredded, any kind (optional))
Instructions
- Preheat oven to 350°.
- Combine eggs, garlic powder, salt and pepper in bowl. Whisk to combine.
- Spray cooking spray in wells of a muffin tin. Divide the red pepper, onion, and the cheese evenly in the wells.
- Pour the egg mixture over the cheese and vegetables.
- Bake for 20 minutes or until set.
- Remove from cups and serve warm or let cool and refrigerate for up to 5 days.
