Make Ahead Muffins

These little nutrition packed gems are perfect for any meal and can easily be taken with for a snack wherever you go!

Instructions

  1. Preheat oven to 350°.
  2. Combine eggs, garlic powder, salt and pepper in bowl. Whisk to combine.
  3. Spray cooking spray in wells of a muffin tin. Divide the red pepper, onion, and the cheese evenly in the wells.
  4. Pour the egg mixture over the cheese and vegetables.
  5. Bake for 20 minutes or until set.
  6. Remove from cups and serve warm or let cool and refrigerate for up to 5 days.
