Mexican Chicken with Arugula

Instructions

  1. Put chicken in crock pot, cover with water and slow cook on high and cook for 4 hours.
  2. Take chicken out of crock pot and shredded with fork and knife. Put chicken on plate.
  3. Dice avocado and put on top of chicken.
  4. Spoon salsa over chicken and avocado. Top with yogurt.
  5. Crush tortilla chips and sprinkle over food.
  6. Put the arugula in a separate bowl. Add lime and oil and toss well. Put arugula around chicken mixture!
