Mexican Eggs

Enjoy eggs with a little Mexican pazaz!

Ingredients

Instructions

  1. Put broth, spinach, and tomato in a small pan. Cover and cook for 5 minutes over medium heat.
  2. Gently crack 2 eggs on top of spinach. Cover and cook about 5 minutes or until egg is cooked.
  3. Remove from heat and put on plate.
  4. Top with Salsa and guacamole or avocado. (can also add in a bit of jalapeno is you'd like to add some spice!)
