Mexican Lettuce Wraps
This is a tasty Mexican twist on traditional lettuce wraps.
Ingredients

- cooked and diced

1 leaf lettuce (romaine or red leaf (large))

1/3 cup cooked quinoa
- cook according to package

2 tbsp salsa
- any kind

2 tsp coconut milk
- dairy free yogurt can be substituted

1/3 tomato
- diced
Instructions
- Mix chicken, quinoa, salsa, yogurt (or substitute), and tomato in bowl.
- Place filling inside lettuce leaf, roll up, and enjoy.
