Mushroom Quinoa Soup
This is a satisfying, delicious, and comforting meal packed with protein, fiber, and vitamins. It's a great way to enjoy quinoa which is one of the few plant based complete proteins.
Ingredients

1 1/2 cups vegetable broth
- low-sodium and organic is preferable

1/4 cup yellow onion
- chopped

1/4 cup carrots
- diced

1/4 cup celery
- diced

1/4 cup mushrooms
- sliced

3/4 cloves fresh garlic
- minced

1/4 cup cooked quinoa ((follow package directioins))

1/4 tsp ground black pepper
Instructions
- Put all ingredients into a large pot and bring to a boil, then reduce heat to low. Cover and cook until Quinoa is soft, approx. 50 minutes.
