My Famous Corned Beef Hash
Everyone I've made this for goes nuts over it!
Ingredients

2 tsp avocado oil

1 potato
- I love to use a white sweet potato

1/3 cup onion
- diced
-
1 cup celery
- diced

1/3 jalapeno
- diced

8 ounces cooked corned beef

1 tbsp dried dill
Instructions
- Preheat oven to 450°
- Peel and dice potato
- Cover with 1 tsp oil and put in oven
- Dice onion, celery, jalapeno
- Put 1 tsp oil in pan and add onion. Cook on medium high heat until golden
- Add celery and jalapeno, turn down heat to low and cook for 10 minutes
- Cut up corned beef and add to pan and stir
- Once potatoes are browned add to pan
- Sprinkle with dried dill, stir and serve
- You can add eggs on top too!!
