My Famous Corned Beef Hash

Everyone I've made this for goes nuts over it!

  1. Preheat oven to 450°
  2. Peel and dice potato
  3. Cover with 1 tsp oil and put in oven
  4. Dice onion, celery, jalapeno
  5. Put 1 tsp oil in pan and add onion. Cook on medium high heat until golden
  6. Add celery and jalapeno, turn down heat to low and cook for 10 minutes
  7. Cut up corned beef and add to pan and stir
  8. Once potatoes are browned add to pan
  9. Sprinkle with dried dill, stir and serve
  10. You can add eggs on top too!!
