No-Guilt French Toast
French toast, no guilt, what more needs to be said!
Ingredients

1 1/2 tsp coconut oil

1 egg

1/3 cup milk
- any type

1/3 tsp cinnamon

1 tbsp orange juice
- no sugar added

2 slices bread
- organic, gluten-free bread is preferred

1/2 tsp vanilla
-
2 tbsp plain yogurt
-
1/2 cup strawberries
- stems removed and sliced
Instructions
- To make sauce, place strawberries in a small saucepan and cook covered until soft and juices are released. Add vanilla and yogurt and stir. Continue heating over low heat until warmed.
- Put oil in a pan and heat over medium heat.
- In a shallow bowl, mix eggs, milk, cinnamon, and orange juice together.
- Quickly "soak" bread in egg mixture on both sides and then place into theh hot pan.
- Cook both sides until golden brown on each side.
- Place french toast on plate and top with strawberry and yogurt sauce.
