Pork with Olive-Caper Sauce

Ingredients

1/4 pound pork tenderloin

1 tbsp whole wheat flour
- Use a gluten-free flour if gluten sensitivity

1 1/2 tsp olive oil

2 tbsp plain yogurt

2 tbsp chicken broth
- can substitute vegetable broth; low-sodium, organic is best

2 tbsp Kalamata olives
- pitted and chopped

1 1/2 tsp capers
-
1 1/2 tsp parsley
- fresh, chopped
Instructions
- Slice pork into 1” thick pieces. Dust both sides of each piece of pork with flour.
- Put half the oil in a pan and heat.
- Add 1/2 of the pork and cook for 3 minutes on each side. Remove pork and put on a plate.
- Add the remaining oil and pork to the pan. Again, cook 3 minutes on each side.
- Add all pork to the pan and pour in broth. Bring to a boil.
- Turn down heat to low and stir in yogurt, olives, and capers. Cook for 3 additional minutes. Sprinkle with parsley and serve.
