Pork with Olive-Caper Sauce

  1. Slice pork into 1” thick pieces. Dust both sides of each piece of pork with flour.
  2. Put half the oil in a pan and heat.
  3. Add 1/2 of the pork and cook for 3 minutes on each side. Remove pork and put on a plate.
  4. Add the remaining oil and pork to the pan. Again, cook 3 minutes on each side.
  5. Add all pork to the pan and pour in broth. Bring to a boil.
  6. Turn down heat to low and stir in yogurt, olives, and capers. Cook for 3 additional minutes. Sprinkle with parsley and serve.
