Portobello Burger
This recipe swaps out the traditional beef patty for a hearty portobello mushroom cap, grilled to perfection and topped with all your favorite fixings.
Ingredients

1 portobello mushroom
- large cap

1/2 tsp olive oil

1/2 whole wheat bun
- organic or GF or 1 slice of whole wheat bread

1 tbsp blue cheese
- crumbled, optional

1/2 cup arugula
- can substitute other lettuce

1 slice tomato
Instructions
- Heat grill to medium or oven to 350º.
- Brush both sides of the mushroom with olive oil. Put the mushroom on the grill or in the oven for 4 minutes on each side.
- Place mushroom caps on bread or bun.
- Sprinkle with blue cheese, and top with tomato, arugula, and lettuce. Eat open-faced.
