  1. Preheat oven to 375° and lightly grease a baking dish with cooking spray or olive oil.
  2. In a large bowl, mix cottage cheese, broccoli, bell pepper, zucchini, spinach, and onion.
  3. In another bowl, whisk eggs, olive oil, garlic powder, onion powder, black pepper, and salt.
  4. Pour the egg mixture over the veggies and stir to combine.
  5. Spread evenly in the baking dish and top with shredded mozzarella.
  6. Bake 30–35 minutes or until golden and set in the center.
