3/4 cup cooked quinoa
- cook according to package

1/8 cup carrots
- shredded

1/8 cup peas

1/8 cup red peppers
- diced

1/8 cup garbanzo beans

1 tsp parsley
- fresh, use less if dried

2 tsp olive oil

1/2 tsp fresh lime juice

salt & pepper
- to taste
Instructions
- Mix in all ingredients. If you'd like, garnish with a few tomatoes or a lime, and enjoy!
