Quinoa with Black Beans and Lemon Dressing
This is a delicious way to get lots of protein and fiber. It can be enjoyed as a meal or a side.
Ingredients

1 cup cooked quinoa
- cook according to package

1 tbsp olive oil
- divided use

1/4 cup fresh basil
- chopped

1 tbsp lemon juice
- fresh squeezed

1 1/2 tsp Dijon mustard

1/3 cup red pepper
- diced

1 green onion
- thinly sliced

1/4 cup black beans
- drained and rinsed

1/4 avocado
- diced
Instructions
- Cook quinoa according to package and bring to room temperature. Combine all ingredients and stir well.
