Roasted Balsamic Brussels Sprouts with Grapes and Goat Cheese
This is a fun version of a favorite side!
Ingredients

1 cup Brussels sprouts
- quartered

1 1/5 tsp coconut oil

1/5 cup grapes
- halved

1 tsp balsamic vinegar
- can substitute balsamic glaze

5 tsp goat cheese
- crumbled
Instructions
- Preheat oven to 425.
- Cut up the Brussels sprouts into quarters and mix with coconut oil.
- Cook the sprouts on a baking sheet for about 3 minutes until the coconut oil melts.
- Take Brussels sprouts out of the oven and gently toss them around in the coconut oil, and cook for another 15 - 20 minutes until brown.
- Remove the Brussels sprouts from the oven and mix in the grapes and Balsamic vinegar or glaze.
- Cook for 10 additional minutes, take out, and let cool.
- Crumble the goat cheese into the sprouts and enjoy!
