Roasted Carrots With Dill
A naturally sweet side dish topped with dill.
Ingredients

4 oz carrots
- about 1 medium to large carrot, peeled and sliced into rounds or sticks

1 tsp olive oil

1/4 tsp dried dill
- fresh, chopped

1 pinch salt

1 pinch black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the carrots with olive oil (or butter), dill, salt, and pepper.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 20–25 minutes, stirring halfway through, until tender and caramelized.
