Seared Salmon and Sweet Potato Hash
Ingredients

1/2 lb salmon

1 tbsp oil
- divided use

1/2 tsp cajun seasoning

1 tbsp lemon juice
- fresh

1 sweet potato
- cooked
-
1/3 cup celery
- diced

1/3 cup onions
- diced

1 egg

Instructions
- Sprinkle salmon with 1 tsp dill. Put 1 tbsp oil in cast iron pan. Put over high heat. Once pan is very hot, add salmon fillets. Cook for 2 min and once the salmon releases from the pan flip and cook until it reaches your desired doneness.
- Peel and cut sweet potatoes into bite-size pieces. Put 1 tbsp oil into pan once hot add onions. Cook for 3 minutes and add celery and sweet potatoes. Cook for 4 minutes and stir after 2 minutes.
- Break salmon into bite-size pieces, add to pan and stir.
- Add 4 eggs and place gently on top of salmon hash. Turn heat to low, cover and cook until eggs are just set.
