Shrimp and Cilantro Rice Bowl
Fragrant cilantro-infused rice forms the base for this delicious bowl that also incorporates shrimp, peas, and avocado.
Ingredients

1/2 cup cooked rice

1 pinch kosher salt

3 tsp lime juice
- fresh squeezed

2 tbsp cilantro
- fresh, chopped

1/2 clove garlic
- minced
-
3/4 tsp soy sauce
- substitute Braggs Liquid Aminos for a gluten-free option

1/8 tsp crushed red pepper flakes

1/4 lb shrimp
- peeled and deveined
-
2 tbsp peas
-
2 tbsp yellow onion
- diced

3/4 tsp olive oil
-
1/4 avocado
- chopped
Instructions
- Cook rice according to package and stir in salt, lime juice, and cilantro.
- In a large bowl, combine garlic, soy sauce, and crushed red pepper flakes and stir. Add shrimp and toss until combined.
- Add olive oil to a large skillet and heat over med. Add shrimp with marinade and onions and cook until just pink.
- Add peas and cook 1 additional minute.
- Put rice into bowls and top with shrimp and pea mixture and finish with chopped avocado.
