Shrimp ceviche (Ceviche de Camarón)
This can be enjoyed as a refreshing and tangy appetizer or main course!
Ingredients

2 1/2 oz shrimp
- peeled and deveined

2 1/2 tbsp red onion
- dice small

2 1/2 tbsp tomatoes
- diced

2 tsp cilantro
- chopped

2 tsp lemon juice
- freshly squeezed, can substitute lime juice

4 tsp orange juice
- freshly squeezed

1 tsp jalapeno
- minced, seeds removed

1 tsp Dijon mustard

1/3 clove garlic
- minced

1/2 tsp oil

salt and pepper
- to taste
Instructions
- Heat up a pan on medium heat and add garlic and oil. Add in shrimp and cook for 2-3 minutes. Do not overcook.
- In a separate bowl, add lemon or lime juice, orange juice, jalapeños, tomatoes, mustard, onions, salt, and pepper. Mix.
- Add the shrimp and chill in the refrigerator for an hour or two.
- Garnish with cilantro and serve with tortilla chips or plantain/banana chips.
