Shrimp and Veggie Fried Rice

Fried rice isn't just for takeout, you can make this healthy and delicious version at home!

  1. In a medium size pot pour vegetable/chicken broth and cook over medium heat.
  2. Add garlic and ginger and cook for 3 minutes.
  3. Add onion, pepper, and broccoli and simmer until vegetables are slightly soft.
  4. Add shrimp to pot and simmer an additional 5 minutes. Stir
  5. Stir in soy sauce.
  6. In a separate large pan add sesame oil. Once pan and oil are hot add eggs and stir slowly until eggs are set.
  7. Add the brown rice and stir.
  8. Add vegetables and broth to rice and stir completely.
  9. If you want to spice it up, add some hot sauce! If you prefer to sweeten it up, add some diced pineapple.
