Shrimp Noodle and Lettuce Bowl
This is a light and refreshing meal filled with lots of yummy flavors including a variety of veggies, rice noodles, and shrimp.
Ingredients

1 cup rice noodles
- cooked

4 large shrimp

1/4 red pepper
- large, diced

1/4 cucumber
- diced

1/4 cup fresh mint

1/4 cup fresh basil

1 cup lettuce
- chopped

1 tbsp cashews (chopped (can substitute peanuts))

1 tbsp rice vinegar
-
1 1/2 tsp sesame oil
-
1/8 cup soy sauce
- can substitute Bragg Amino Acid for gluten-free option

1/2 tsp red pepper flakes
-
1/2 tsp ginger
- minced
-
1/8 cup rice vinegar
-
1/2 tbsp fish sauce

1 tbsp honey
Instructions
- Put lettuce, diced red peppers, and diced cucumbers around the outside of a bowl/plate.
- Mix half of the sesame oil, rice vinegar, and soy sauce together and then mix into the cooked, warm rice noodles (cooked according to the package).
- Put the seasoned noodles in the center of the bowl/plate.
- Stir-fry shrimp in a pan over medium-high heat using the other half of the sesame oil for 3 minutes or until cooked through (don't overcook will become rubbery).
- Place cooked shrimp, mint, basil, and chopped nuts on top of the noodles.
- For dressing, mix the last 5 ingredients together until well blended. Pour dressing over noodles and lettuce. Enjoy!
