Shrimp & Sausage Creole
Andouille sausage, shrimp, tomatoes, carrots, peppers and so much more create this masterful Louisianna-style dish.
Ingredients

1 tbsp butter
- can substitute olive oil

1 tbsp all-purpose flour

1/4 yellow onion
- chopped

1/4 bell pepper
- chopped

1/2 stalk celery
- chopped

1/4 cup carrots
- chopped

3/4 cloves garlic
- minced
-
2 oz andouille sausage
- sliced into 1/2" pieces

1 1/2 tsp cajun seasoning
-
1/2 cup fire-roasted tomatoes
- diced

1 cup chicken broth
-
1/4 lb shrimp
- peeled and deveined

3/4 green onions
- sliced
-
salt & pepper
- to taste
Instructions
- Put butter/oil in a large skillet and cook over medium heat until melted. Add flour and stir constantly, until brown in color, about 10 minutes.
- Add onions, peppers, celery, carrots, garlic, cajun seasoning and stir. Add sausage, diced tomatoes, chicken broth and turn up heat, and bring to a boil.
- Once boiling, reduce heat to low and simmer for about 45 minutes or until sauce is thickened, stirring occasionally. Add shrimp & green onions, stir, and cook for 10 minutes. If needed add salt and pepper.
