Simple Dinner - Sausage and Peppers
This is a simple go-to meal packed with protein, veggies, and great flavors.
Ingredients

1/4 lb turkey sausage (sliced into bite size pieces (elk sausage is a good substitute))

1/4 red pepper
- diced

1/4 yellow pepper
- diced

1/4 large onion
- diced

3/4 tsp dried oregano
-
2 tbsp water
-
salt and freshly ground black pepper
- to taste
Instructions
- Put water in a large pan and add sausage.
- Place diced onions and peppers on top of sausage.
- Cover and cook over medium heat for approx 20 min. Check 1/2 way through cooking process to see if you need to add more water (water should just cover the bottom of the pan).
- Remove lid and add oregano and ground pepper and stir. Cook additional 5 min.
- Drain excess liquid and serve warm.
