Simple Salad with Lemon Dijon Dressing
The dressing adds a refreshing burst of citrus flavor to this simple yet delicious salad.
Ingredients

1 1/2 cups spring greens mix
- or any greens of your choice

1/8 English cucumber
- very thinly sliced

1/8 red onion
- peeled and very thinly sliced

2 tbsp pepitas
- can substitute any toasted nuts of choice

2 1/4 tsp olive oil

3/4 tsp lemon juice
- can substitute red wine vinegar

1/4 tsp Dijon mustard

1/4 clove garlic (minced (or 1/2 teaspoon garlic powder))

salt and pepper
- to taste
Instructions
- Mix all dressing ingredients - oil, lemon juice, mustard, garlic, and salt and pepper together and whisk until blended.
- Mix all salad ingredients in a bowl and top with dressing.
