Slow-Cooker Chicken Taco Soup

Ingredients

1 chicken breast
- boneless, skinless

1/4 package taco seasoning
- lower sodium mix preferred

1/2 cup black beans
- rinsed and drained

1/2 cup pinto beans

1/2 can Rotel
-
1/4 cup salsa

1/4 mild pepper
- chopped; any type works

1/2 cup tomatoes
- diced

1/4 ear or can corn
-
1/2 cup chicken stock
-
black pepper
- to taste

fresh cilantro
- optional for garnish

cheese
- optional

tortilla chips
- optional
Instructions
- Place the chicken breast in a crock pot or other slow cooker. Sprinkle in the taco seasoning. Add all other ingredients and cook for 6-7 hours on low heat or 4-5 hours on high heat.
- Once cooked, shred the cooked chicken with two forks. I usually add the fresh corn about 1-2 hours before serving for an extra crunch but can add with the other ingredients.
