Smoked Salmon Salad
Ingredients

2 cups mixed greens

1 tbsp dill
- fresh, chopped

1 1/2 oz smoked salmon
- substitute tempeh for vegetarian

1/4 cups white beans
- cooked

1/2 tsp capers

1/4 tbs olive oil

2 tsp rice wine vinegar

4 tsp water
-
1 tsp lemon juice
-
1/4 tsp dijon mustard

1/4 tsp parsley
- chopped

2 tsp shallot
- chopped

salt and pepper to taste
Instructions
- Place all vinaigrette ingredients in a jar. Shake well until thoroughly mixed.
- Toss salad greens in vinaigrette. Top salad with smoked salmon pieces, beans, capers, and dill.
