Southwest Quinoa Bowl with Chicken

Ingredients

1/2 cup quinoa
- cooked; cook according to directions

4 oz chicken breast
- diced; grilled, baked, or leftover

½ cup black beans

½ cup bell peppers
- diced

1/2 avocado
- diced

2 tbsps salsa

2 tbsps cottage cheese

1/2 lime
- juiced
-
1/4 cup cilantro
- chopped
Instructions
- Combine quinoa, chicken, beans, and bell peppers in a bowl.
- In a separate bowl, blend salsa and cottage cheese.
- Combine and top with avocado, cilantro, and a squeeze of lime. Serve warm or cold.
