Spinach Quinoa Salad
Ingredients

1/4 cup quinoa
- cooked according to package directions; can substitute farro

1 cup spinach
- fresh, baby

4 grape tomatoes
- halved

3 tbsp chickpeas
- canned, rinsed and drained

1 tsp parsley
- fresh, chopped

1 tsp green onion
- chopped

1" slice avocado
-
2 tsps olive oil
-
1/2 tsp lemon juice
-
1 pinch garlic powder
-
hot pepper sauce
- to taste

salt and pepper
- to taste
Instructions
- In a large bowl, toss spinach and warm quinoa, allowing the spinach to wilt slightly. Add tomatoes, chickpeas, parsley and green onions.
- Whisk together dressing ingredients. Toss with salad.
