Spinach Quesadilla
Quesadillas are always a fan favorite - try this healthy twist!
Ingredients

1 ounce fresh baby spinach
- about 1 cup

1 green onion
- chopped

1/3 small tomato
- diced

1 tsp lemon juice

1/4 tsp ground cumin

1 pinch garlic powder

2 tbsp shredded cheese
- ie. Monterey Jack cheese or Mexican cheese blend

3 tbsp low-fat cottage cheese
-
1 tortilla
- whole wheat recommended
Instructions
- In a large nonstick skillet, cook and stir the first six ingredients until spinach is wilted. Remove from heat; stir in cheeses.
- Place the tortilla in a pan that has been lightly coated with olive oil. Fill half the tortilla with the spinach mixture and fold over. Cook over medium heat until golden brown, 1-2 minutes per side. Enjoy!
