Stuffed Pepper Soup
This stuffed pepper soup combines all of the savory goodness of traditional stuffed peppers in a convenient and cozy bowl.
Ingredients

1/4 lb ground beef
- you can substitute ground turkey

1/4 onion
- diced

1/4 red bell pepper
- diced

1/4 green bell pepper
- diced

1/4 can tomatoes
- diced

1/4 can tomato soup
- can substitute tomato sauce

1/2 cups brown rice
- measure cooked

1/4 can chicken broth
-
1/4 tsp garlic powder

salt and pepper
- to taste

cheddar cheese
- grated; optional garnish

sour cream
- optional garnish

green onion
- can substitute chives, optional garnish
Instructions
- Brown and crumble the ground beef, along with the onion and peppers. Cook until done. Drain off any excess fat.
- Add remaining ingredients (please note that the rice is already cooked when you add it in). Simmer and serve! Top with garnishes. Enjoy!
